Sweet chestnut is a durable, versatile timber, normally a pale colour throughout. In some older trees whose roots are colonised by beefsteak fungus (Fistulina hepatica), the fungi react with the tannin-rich timber causing streaks of colour to run through the otherwise pale wood. Tannin is a great natural preservative found in oak and sweet chestnut, hence ‘tanning’ of leather.
